Description
This Kanetsune knife series feature Hon-Warikomi clad blades with a VG-1 core sandwiched by SUS410 stainless steel. This provides excellent edge-retention to a hardness of HRC 59-60. They are beautifully-hammered, mirror polish, tsuchime-finish blades. "Tsuchime", is a Japanese-style hammer finish and helps to release foods quickly from the blade while cutting, making the meal-prep process quicker and more efficient.
The Santoku is a multi purpose Japanese knife that can also fit on smaller chopping boards, making it the perfect choice for professional chefs and home cooks alike! The name Santoku translates to ‘three virtues’ and symbolises the characteristics of this knife – chopping, dicing and mincing. A great all-purpose knife.
This manufacturer is located at Seki City, known to be the City of Blades. The underground method in Japanese sword-making called “Seki-den” which started some 800 years back has been handed down to this present day. One of Japan’s supreme master craftsmen, Kanetsune Seki was able to conserve this method and employ it in all of his knives.
